Photograph the fish while it is still fresh and the colours are true as the colours will fade quickly.
Dont be afraid to take plenty of photos.
Fill your view finder with the whole fish and take close ups like the below examples.

After taking plenty of photos wrap the fish in a damp towel until you have access to a flat board and some glad wrap.
The board should be slightly larger than the fish to protect the fins and should be covered in glad wrap.
Place the fish show-side up on top of a damp towel

Wrap both the board and the fish with glad wrap,thus sealing it, leaving the towel in place.

The fish can now be frozen .
